My SO is on tour visiting her familiy, so I had the opportunity to make my delicious beef leg stew in the crockpot yesterday. It’s really easy, yummy and filling. Follow this simple recipe and enjoy a real manly comfort food:

 

Ingredients:

– 1kg Beef shank cuts
– Salt & Pepper
– Flour
– 1/4 cup starch solution
– 4-5 sprigs Thyme
– 1 cup Parsley, chopped

Sauce:
– 2 tsp. Sugar
– 2 cups Beef Stock
– 1 cup Red wine
– 1/2 pkg. brown gravy mix

Vegetables:
– 2 medium onions, cubed
– 1/2 stalk of leek, sliced
– 2 big Potatoes
– 3 cloves Garlic, smashed
– 1/2 cup dried Mushrooms
(Plus: Add verything you like)

Procedure:

Season the beef with salt & pepper, flour lightly and sear in a hot pan for a nice crust. Set aside. Cut up the veggies and smash the Garlic. Mix the ingredients for the sauce in a bowl.

Put all your veggies and the dried mushrooms in your crockpot, add salt & pepper (do not be too hesitant here) and give it all a good mix. Place the seared meat on top and pour the sauce on top. The sauce should cover the meat roughly.

Set your slow cooker to “Low” for about 7-8 hrs. (or on “High” for about 4 hrs.) or until the meat is fall-off-the-bone tender. Serve.

About 1 hour before the end, add the thyme and parsley, and – if needed – add some corn starch solution to thicken the sauce (the crockpot has to be se on “High” for this). Serve.
