Another un-fancy, yet yummy recipe you can easily memorize. It requires only a few ingredients, it’s no fuzz to make and it’s hearty and filling. Best served over rice.

Ingredients (for one):

150g Chicken, cut into thin strips
150g Mushrooms, cut (use rehydrated or fresh, any kind you like)
2 tbsp. grated garlic
1 tbsp. grated ginger
2 tbsp. hoisin sauce
1 tbsp. sesame oil
corn starch slurry
2 green onions, cut into 1″ length
1 tbsp. Sesame Seeds for garnish

Marinade:
1 tbsp. soy sauce
1 tbsp. rice wine
1 tbsp. corn starch

Method:

Combine chicken with rice wine, soy sauce and starch and stir. Set aside for 30 minutes.

Stir-fry first ginger, then garlic until fragrant, each about 15 secs. Over high heat, add the marinated chicken and stir fry for about 2-3 mins until nicely browned and then remove.

Add more oil and stir fry the mushrooms for about 3 mins, add Hoisin Sauce and Sesame oil and stir. Add 1/2 cup of water, cover, and let simmer for about 2 mins.

Add slurry, stir and let thicken. Remove cover, add the chicken and green onions and stir fry for another 2 mins. Serve sprinkled with sesame seeds.
