Method:Slice the spring onions thinly and diagonally and cut the garlic into thin slices. To a cold pan, add any neutral tasting cooking oil, then add the onions and garlic (plus some chili flakes, optionally). Heat up the pan to medium high to slowly extract the flavors. Fry at medium high temperature, stirring often, until the onions and garlic are deeply golden brown but not burnt – rather go slower than faster. For reference: My stove setting was 7 out of 10. When done, drain the oil through a sieve and store it in a clean, sealable jar. You can use the fried scallions for a stir fry or similar right away. |
