A quick and simple recipe – 15 mins. and done. Satisfying and delicious, and with a surprising twist from the fish sauce (if you have it at hand, don’t leave it out!)

Ingredients:

1 zucchini
1 medium onion
2 cloves garlic
200 g ground meat (just leave this out if you’re vegetarian)

Dough:
200 g all-purpose flour
350 ml milk
2-3 eggs
1 tsp. salt
1.5 tbsp. asian fish sauce

 

Method:

In a pan over high heat fry the ground meat until nicely browned and crumbly. Season with salt and pepper and set aside to cool. 

On the coarse side of a box grater, grate all of the zucchini, then squeeze thoroughly (e.g over the kitchen sink)  with both hands to remove as much moisture as you can. Set aside in a large enough bowl. Cut the onions into strips and finely cut or press your garlic. Mix zucchini, garlic and onion with your hands and, once it’s cooled, add the ground meat as well. Season with chili flakes or any herbs that you might like.

In a separate bowl, combine the dough ingredients (don’t forget the secret ingredient!) and mix with a whisk until you have a smooth – well -pancake dough. Thoroughly fold in the prepared veggies/meat.

Wipe the pan from before, add a little oil and let it come to temperature over medium-high heat. Working in batches, one medium scoop at a time fry and flip until golden brown on both sides and cooked through. If necessary, keep them warm in a 50 C oven until all of them are done.
