Asian-style fried rice: Easy, delicious, fast. (Serves: 1)
Sauce:
- 1 tbsp. soy sauce
- 1 tbsp. oyster sauce
- 1 tbsp. shiaoxing cooking wine
- ½ tsp. fish sauce
Rice:
- 2-3 cups pre-cooked (leftover) rice
- 2-3 cups of mushrooms
- 2 eggs, beaten
- 3 stalks green onion
- 2 cloves of garlic
- Thumb-sized piece of ginger
- Dash of sesame oil
- Salt & Pepper
Mince garlic, ginger and spring onions. Reserve 1/3 of spring onions for garnish. Chop Mushrooms. Mix ingredients for sauce.
Add oil to a pan and sautee mushrooms over medium-high heat (about 8 – 10 minutes), add salt and pepper to taste. Remove and set aside.
Heat pan to high and add 2 beaten eggs. Let cook until a little firm and flaky, add rice. Toss everything around antil well combined.
Add Garlic, ginger and minced spring onions and stir fry thoroughly. Add the mushrooms, and – toward the end – add the seasoning sauce and mix well. Dash a little sesame oil over all of it for taste.
Move to a plate and garnish with the reserved spring onions.
