I had a full pund of ground meat left over yesterday, so in order to not let it spoil I made an Oven Fattie from it. Man, this is Heart Attack Food… Extra juicy, cheesy and frickin’ delicious. Here’s how to do it:

Ingredients:

500g ground meat
1 cup breadcrumbs
1 egg
2 shallots, finely sliced
2 cloves garlic, minced
1 cup ground cheese of your liking
1 package of bacon
Your favourite dry rub
Your favourite BBQ sauce
Salt & pepper

Method:

Preheat your oven to 200 °C above-/below heat.

Combine the meat, egg and breadcrumbs to a smooth mass and season with salt and pepper. Sautee garlic and shallots in a pan over medium heat until translucent.

Make a ball from the meat mix, forming a hole in the middle where you add the sauteed onion and cheese and close it up firmly. Flatten everything a little and dust with your favourite rub. Now, in an oiled oven safe dish (as fittingly as possible) lay one layer of bacon, place the meatball on it and put another layer of bacon on top. Firmly press the bacon to your construction.

Cover with aluminium foil and bake in the oven for about 35 mins. at 200 °C. Remove the foil, raise the temperature to 250 °C above heat and grill until the bacon ist crisp. If you wish you can brush it liberally with your favourite bbq sauce or glaze and let it caramellize.
