This is another thrown-together, absolutely non-traditional yet very tasty pasta recipe. It’s amazing what you can do in practically no time with simple ingredients and a little creativity:

Ingredients (for 2):

250 g pasta (in this case linguine)
1 shallot, finely diced
3 cloves of garlic, finely sliced
50 g bacon, finely sliced
1/2 cup grated parmesan
1/2 cup chopped parsley
Salt & pepper

 

Directions:

Set up a pot with salted water and cook the pasta according to the package directions.

In pan over medium high heat, fry the bacon until lightly browned, then add garlic and shallots until nicely browned and translucent but not charred.

Once the noodles are done, transfer them to the pan directly from the pot using tongs. You want to have some of the pasta water in there.

Swirling around, add the cheese and add more pasta water little by little as needed to get a creamy consistence. Turn off  the heat and season with salt and pepper.

Finally add in the parsley, mix again and serve.
