I don’t know if this is a real asian dish or if it’s just some thrown together delicacy. I read this somewhere some time ago and finally gave it a try – and for real: This is simple, easy-to-make dinner, very yummy and perfect for evenings when you can barely be arsed to cook. 🙂

 
Ingredients (1 person):

Leftover rice for one
1 large egg
Salt & pepper
Soy Sauce
Sesame Oil
Small knob of butter
Some chopped spring onion.

Optional:
More toppings as to your liking
Oyster sauce

 
Method:

Prepare the toppings (whatever you crave for). I fried some mushrooms in a good knob of butter and with a dash of soy sauce. Heat up your rice.

In a pan over medium high heat, fry the egg(s) as you prefer them – sunny side up or flipped over. Season with salt and pepper.

Add hot rice to a serving bowl and arrange the eggs and other toppings on top. Drizzle with one teaspoon of toasted sesame oil and one to two teaspoons of soy sauce. Add a half teaspoon’s worth knob of butter in the middle and let it melt. Fancy people add 3-4 drops of oyster sauce to the eggs.

Sprinkle with chopped green onion and enjoy. And, really, this IS enjoyable 🙂
