It’s the notorious predicament of cooking spinach: You end up with a result that is a mere fraction of what you put in 🙂

Nonetheless, it’s a delicious and healthy side while very simple to make. Here’s how:

Ingredients for 2:

350g fresh spinach
1 shallot
1-2 cloves of garlic
1 1/2 tbsp. olive oil
Salt & Pepper
Optional: some lemon juice, some nutmeg

Method:

Sort and wash the spinach and finely chop the garlic and shallot. In a pan over medium high, heat some olive oil and saute the garlic and shallot until translucent.

Add the spinach and fry for half a minute, turning it over several times to evenly coat with the oil. Cover with a lid and – occasionally turning it again – let it cook until completely wilted, about 3-4 minutes max.

Season with salt and pepper to taste and optionally with a little nutmeg and/or a dash of lemon juice. Serve.
