Finally had the time to make my first homemade takoyaki trying out my recently made makeshift apparatus. I recommend this strongly to everyone who likes japanese food! They’re multo delicioso!

Here’s my Recipe (halved and differing a little from the Original as usual, according to which ingredients I can find here).

Yield: About 15 pcs.

Batter:
1 cup (240ml) cold Dashi
1 egg
1 tsp soy sauce
pinch of salt
1/2 cup plus 1 Tbsp all purpose flour/cake flour

Toppings:
1 green onion, finely chopped
5-6 oz octopus, chopped (but I use shrimps)
Takoyaki sauce
Mayo
Katsuobushi

In a large bowl, mix well Dashi, eggs, soy sauce, salt, and flour with a whisk.

Heat a Takoyaki pan with oil to very hot, just until the oil begins to smoke. Pour batter to fill the holes of the pan. Drop octopus pieces in the batter in each hole, and sprinkle chopped green onions all over the pan. Cook at medium heat for 1-2 minutes and turn over using a Stick. Cook another 3-4 minutes, turning constantly.

Place the cooked Takoyaki on a plate and pour Takoyaki sauce and mayo over them (to taste). Finish the dish by sprinkling the Takoyaki with Katsuobushi (dried bonito flakes).
