I like these and always make them in advance for a few days. It’s not too much work (let it be 10 minutes) and they reheat in the microwave in 2 minutes in the morning, so they’re easy and convenient. They keep in the fridge for about two days, otherwise I think you could also freeze them. But usually they don’t last very long…


Ingredients:

1 cup grated potatoes 
1 handfull of cheddar cheese 
1 tsp. garlic powder (careful here)
1 handfull bacon strips, cooked, optional
Eggs as needed 
Spices to taste (Paprika, dried herbs, 
Salt and pepper, to taste 

Procedure:

Preheat your oven to 190 °C.

Mix potatoes, cheese and garlic powder in a bowl. Grease a muffin baking sheet with oil and scoop a hearty amount of the potato mixture into each pit. Crack one egg on top of each scoop and sprinkle with salt & pepper and your desired spices.

Bake in the oven (bottom and above heat) for about 15-20 minutes, until the eggs are set.
