Dug out my slow cooker again yesterday after some time and made some pork neck. I don’t know where I got this recipe from anymore, but I really like it every once in a while since it’s very yummy and easy to make. The meat comes out fork tender and juicy and it has a nicely round and savoury taste.
Ingredients:
1kg pork neck
Salt and pepper to taste
Honey Balsamic Glaze:
1/4 cup (60ml) balsamic vinegar
1/4 cup (60ml) chicken stock
2 tbsp. dry Sherry
4 tbsp. honey
4 cloves garlic, finely minced
5 large shallots, in chunks
1 tbsp. olive oil
1 tsp. each dried oregano, basil and thyme
2-3 tsp. hot sauce (Chipotle, etc., to taste)
Salt and pepper to taste (liberally)
Instructions:
Pat dry the pork neck, season with salt and pepper and rub that in well. Mix the ingredients for the sauce.
High-heat some oil in a pan and cook the meat for about 2-3 minutes per side until nicely browned on the surface. Then place the meat in your slow cooker, add the chunked shallots and pour in the sauce.
Cook on LOW for 7 hours, or on HIGH for 4 hours. Leaving it in for a little more doesn’t do any harm. If you like pork, you will like this.
