I had an open package of Somen Noodles in the kitchen, that I wanted to use up, so I made cold Somen noodles for Lunch. Since Somen are very low in calories but also relatively filling, I like this from time to time. They’re fool proof, tasty and, while my version was – as usual – not too optically appealing, they are pretty original.
Here’s what you need:
- Somen noodles
- Men-Tsuyu
- Shredded nori seaweed
- Green onion, chopped
- Optional: Some wasabi and soy sauce
Just cook the somen noodles according to the package directions and cool them under under cold running water. Transfer to a bowl and top with shredded nori and chopped green onion.
Mix some men-tsuyu with some soy sauce or dilute with water according to your preference. You can add a little wasabi (I like that) and your dipping sauce is done.
And that’s it.
