I am that pissed. Yesterday my wife started her ride into her holidays to the northern germany refuge, visiting her sister and going to relax a little… and I am stuck here having to work and stand to attention, right in the middle of summer… 🙁 Whatever. Here’s the chinese bacon progress so far:

I didn’t manage to take the pork belly strips out of the fridge within 24 hours, so they got 10 hour plus for marinating – I guess this won’t do any harm. Tied strings to them and hanged them into my old reliable and stalwart drying box for at least three days from now on. I want to achieve a dry and leathery surface, so I can trust them to be really dried.
