Improvised glass noodle stir fry with mushrooms, vegetables and chow mein seasoning sauce (actually, you can throw in whatever ingredients you like). Cobbled together in minutes and actually very tasty. Here’s how:
Ingredients (for 1):
100 glass noodles, soaked in warm water for 10 mins.
1/2 a leek, sliced thinly
3-4 strips bacon, sliced finely
4-5 wood-ear mushrooms, rehydrated
3 cloves garlic, chopped
2 green onions, white and green divided, chopped
2 tbsp. shiaoxing cooking wine
For the sauce (Chow Mein style):
1 tbsp. soy sauce
1 tbsp. oyster sauce
1 heaping tsp. sugar
What to do:
Slice the bacon, chop the greens, rehydrate the muhrooms and chop, soak the noodles. Reserve the green ends of the spring onions for garnish and set aside. Mix the sauce ingredients in a cup and set aside as well.
In a pan on high heat, fry the bacon until it’s lightly crisp and it has released it’s fat.
Add some cooking oil (only if needed) and add in the garlic. Fry until aromatic, about 30 secs., then add in the leeks, green onions (white part) and sliced mushrooms. Stir fry on high heat until lightly browned. Finally add in the cooking wine and let reduce by at least half.
Add in the noodles and pre-mixed sauce and toss to combine everything thoroughly. Serve garnished with green onions (green part).
