This is my sort of breakfast burrito – thrown together from what you’ve got in the fridge and melted together to cheesy, delicious goodness 🙂 Of course you can throw in whatever like but this one is mine. It’s fast and easy in the morning.
Ingredients for one:
2 eggs
1 Flour tortilla
1 stalk green onion
1 slice cooked ham
Ground cheese
Hot sauce or chilli oil
Salt and pepper
Method:
In a small bowl, mix the eggs. Chop the onion and heat up a pan on medium heat (I use “6” out of “9”), adding a little cooking oil.
Add the eggs to the pan and form a disc about as large as the tortilla. Fry on one side until mostly set on the surface and season with salt and pepper. Then place the tortilla on top and let the two combine little. Turn the thing over.
In the middle of your tortilla, add cheese, ham and 2/3 of the spring onion. Season with some hot sauce etc. to your liking. Take a peek at the underside of the tortilla and, if browned to your desire, fold it up in thirds until you have something like a roll. Let sit for another 30-40 seconds to allow to “seal” and the cheese to melt a bit.
Serve garnished with mayo and the rest of the spring onion.
