Simple! And Yummy! Minimum mess and ready in 35 minutes with only 5 minutes work! This is a cheese-and-onion-y delicious side dish from the oven or even a quick dinner for two. Here’s the recipe:

Ingredients:

1 roll of puff pastry
3 medium onions
2-3 tbsp. olive oil
1 ball of mozzarella
Salt, pepper
Dried oregano
Chili flakes

Method:

Preheat your oven to 180°C (fan), or according to the package instructions of your puff pastry.

Peel and halve the onions, then cut into fine slices lengthwise. In a bowl mix them with 2-3 tbsp. of olive oil, season with salt and pepper and add some oregano and chili flakes to taste. Toss to coat evenly. Roughly tear the mozzarella into pieces and set aside.

Line a baking tray of about the size of your pastry sheet with parchment paper and spread the onions, maintaining about 2 cm of space on each side. Cover with the pastry sheet (yes, you’re staging this upside down!) and bake for about 25-30 mins. on the bottom rack.

When done, remove from  the oven and cover with another sheet of parchment paper. Put a second a second baking tray (preferably the same size) on top and flip over. Remove the original baking paper, distribute the mozzarella bits evenly and add more oregano to taste. Raise the heat to 220°C and bake on the top rack until the cheese has melted and cheese and onions become nicely browned.

Cut into quarters and serve. Easy, right?
